Cooking with Meghann 101: Homemade Muffins

I will warn you now, this recipe is dangerous. These are very easy to make, and are really good. This new addiction of mine is thanks to Kari, who gave me the recipe. And who needs to blog more.

This is one of those recipes where there is a base recipe, and then many ways to add to it.

Base recipe:

1 3/4 c flour
1/3 c sugar
2 tsp baking powder
1/4 tsp salt
1 beaten egg
3/4 c milk
1/4 c cooking oil

Preheat oven to 400, grease muffin pan, or use the little cups.

Combine dry ingredients in one bowl, and wet in another. Pour wet into dry, and stir just until moistened. It will be lumpy, this is fine. Fill muffin cups till all have about the same amount, bake for 18-20 minutes, until golden and toothpick comes out clean. Be careful, this is quoted straight from Kari, "they'll be a very light golden, so don't wait for them to get dark golden (sometimes referred to as "burnt")."

Ok, variations.

Blueberry: add 3/4 cup fresh or frozen blueberries to the batter, and if desired, 1 tsp. shredded lemon peel.

Cranberry: add 1 cup coarsely chopped cranberries and an additional 2 Tblsp. sugar to the batter.

Oatmeal: Reduce flour to 1 1/3 cup and add 3/4 cup rolled oats to dry mixture. (tip from me, I used the regular quick cook stuff, and it came out fine.)

Poppy Seed: Increase sugar to 1/2 cup and add 1 Tblsp. poppy seeds to dry mixture.

Banana: Reduce milk to 1/2 cup and add 3/4 cup mashed banana to the wet mixture, and 1/2 cup chopped nuts if you want. Be sure to only grease the pan or use foil cups with this one. Paper will stick. You have been warned.

Cheese: Add 1/2 cup shredded cheddar or monterrey jack to the dry mixture.


Ok, to prove how easy it is, I am going to demonstrate the banana version for you right now!

The cast (toy train and Shamu cup with Pepsi Max optional):



Muffin tin "greased" with cooking spray, because I am lazy



Flour



Sugar



Baking powder



Salt



See my measuring spoons the hubby got me? I love these. I was always losing them, so he got me this set. They are magnetic and stick together.



They can even stick on the fridge if that's how you roll. There are more than these three, but um, I don't know where they are.



Now the wet ingredients! First the egg



Then milk



I realized when I went to make these that I was out of oil. So I experimented and did unsweetened applesauce instead. Shh!



Then the banana



After mixing all that together, pour into the dry ingredients. Looks yummy, doesn't it?



Stir



Just until moistened, and lumpy



Spoon equally into the cups, and bake! Spilling some of the batter on the stove is reserved for people as cool as me.



About 18 minutes later!



mmm.



And here they all are on a plate, don't expect them to last very long like this though. (p.s.-the bottoms were not really that dark, I was having lighting issues)



And there you have it! Don't say I didn't warn you. . .

1.) Yeah, and I like these because they aren't too sweet or anything. Although if you wanted them sweeter it would be easy to just add more sugar or something.

3.) I thought about that, but have never tried the applesauce thing, and was curious to see if it would work. It did!

Thanks, Meghann! These look yummy. The applesauce worked just as well? Have you tried with any whole wheat flour subbed for regular flour? I think I'll have to try making some of these today.

Rachel-Yes, the applesauce was fine. They tasted the same pretty much. As for the whole wheat, no I haven't tried that.

I might try subbing out just 1/3 of the white flour with whole wheat. I'll let you know how it works.

They are awesome. I don't use them for everything, but they're great for stuff like a quick batch of muffins. Plus you can't lose one of the many sizes. ;)
